Gluten free cherry and almond muffins

As a child on of my favorite things to do in the summer was to pick and eat cherries straight of the tree we had in our garden. I simply love cherries! Now that it is cherry season again, I though I would celebrate by making these Cherry-Almond Muffins. Cherries are not only delicious, but they are also low in calories, high in fiber and packed full of nutrients such as antioxidants and vitamin B. These cheery/ almond muffins are so delicious and gluten free.


½ cup of almonds

1 cup of gluten free flour

1 tsp baking powder

6 small dates

2 tsp. honey

2 eggs

2 tbsp coconut oil

A few drops vanilla extract

½ cup milk of choice

3 cups of pitted cherries


  1. Preheat to oven to 190c/375f
  2. In a blender finely ground the almonds and mix with the flour and baking powder. Transfer to separate bowl
  1. In a blender mix the dates, honey, coconut oil, eggs, vanilla extract and milk
  2. Mix the dry ingredients with the wet
  3. Put around 12 muffin tins on a baking pan
  4. Use 1. Tbsp. of mixture for each muffin. Top with 1 tbsp of cherries
  5. Bake for around 20 minutes

  1. Thanks so much for your ‘like’. I love your sweet little Cherry and Almond Muffins, but I am knocked out by the Cherries on the tree! Living in England I have never seen them growing ( although I think they are grown here). Don’t they look so pretty hanging down 🙂
