Zucchini Fritters

My parents garden is currently full of zucchini. The latest favourite way to put all the zucchini in use is in the form of zucchini fritters.  These zucchini fritters are easy to whip up, delicious and such an excellent way to sneak in some extra veggies.  All you need is zucchini, scallions,  garlic eggs, some flour and fresh herbs. Throw the ingredients in a bowl and cook on a skillet for  only a few minutes. These fritters are both gluten free and vegetarian. These make the perfect breakfast, appetizer or light lunch together with a green salad.

Ingredients: 

2 medium zucchini ( I used yellow and green zucchini)

1 glove garlic

2 shallots

1/4- 1/3  cup  flour ( I used buckwheat)

2 eggs

salt

pepper

olive oil – for cooking

optional:

a handful fresh chive

 

Method:

1)Heat a skillet on medium heat. Cook the onion and garlic for a few minutes.

2) Grate the zucchini.  Place the zucchini in a towl, wring all of the excess liquid out of the zucchini with your hands, then set aside.

2) Mix the grated zucchini with scallions, garlic, the beaten eggs,  and 1/4- 1/3 cup flour.

3) Heat  olive oil in a large non-stick skillet over medium heat. Cook the zucchini fritters 3 to 4 minutes per side.

4) Drain on paper towels and serve.
