I like breakfasts that you can prep in the evenings and are ready to eat first thing in the morning. One such breakfast is Bircher musli., a version of over night oats. The Swiss doctor and nutritionist, Maxmillian Bircher- Benner created bitcher muesli for his patients as a way of introducing more raw fruits into their diets. Bircher muesli is still very popular still a very popular breakfast throughout Switzerland and Germany.Bircher muesli involves soaking oats in some kind of liquid (milk, apple juice, yogurt), placing them in the fridge overnight, and eating them in the morning.There are a number of different versions of bircher muesli, but the traditional Swiss Bircher Muesli is made with grated apples as the recipe below.As topping, you can use nuts, fruits, berries, honey etc. For this recipe, I used raspberries, chia seeds and pistachio nuts for topping, which is such as delicious combination.This is also a perfect breakfast on the go, if you don’t want to eat straight away when you walk up.
100 gram rolled oats
1 cup almond milk ( or other preferred milk)
4 tbsp natural yoghurt
2 tsp chia seeds
1 green apple (grated)
½ tsp cinnamon
½ tsp vanilla extract
- Combine the oats, chia seeds, milk, and yogurt, cinnamon and vanilla extract in a jar and leave overnight in the refrigerator.
- In the morning add the grated apple and yogurt and stir well.
- Top with pomegranate, raspberry & pistachio nuts or other desired topping!
