Strawberry tarts


Wimbledon has just started, so I wanted to share a summery dessert inspired by Wimbledon. This means it had to involve the quintessential strawberries and cream.I bought these lovely little tart moulds in Denmark a few months back and finally got to put them in use.  These beautiful strawberry tarts are made with an almond/ coconut flour crust. They are filled with mascarspone and quark/ greek yogurt and topped with fresh strawberries. It is strawberry season in Norway at the moment so I made these with fresh strawberries. These can be made with other berries ,you have on hand,  like raspberries or a mix of different berries. I like to bake with a healthier twist, so these tarts are not too sweet. Bake these fabulous strawberry tarts for your afternoon tea or a nice summer dessert.



Ingredients:  ( makes 6 x, cm tarts). 

The crust:

3/4 cup almonds

1/4 cup coconut flour

1/4 cup  whole rice flour.

1 egg

2 tbsp marple syrup

3 tbsp coconut oil

1/4 tsp vanilla extract.


Mascarpone cream: 

3/4 cup mascarpone cream

1/4 cup  quark or greek yoghurt.

1 1/2 tsp sugar.

1/4 tsp vanilla extract.



12-15 strawberries + more for serving.



The crust. 

  1. Preheat the oven to 200 degrees.
  2. Put the almonds in food processor and pulse until the almonds are until are pulverised ( like almond flour).
  3. In a bowl, blend the almond, coconut flour and rice flour.
  4. Stir in the egg, coconut oil and maple syrup.
  5. knead the dough with your hand, until it resembles  a tart dough
  6. Use non- stick tart moulds. Cook in the oven for about 8- 10 minutes.

The mascarpone cream

  1. blend the  mascarpone and the quark.
  2. Stir in sugar and vanilla extract.
  3. When the tart crust is cooled, dived the cream between the tarts.
  4. Quarter the strawberries and put them on top of each tart.
  5. Serve with more strawberries berries.

  1. I’ve never heard of Wimbledon, but I’m from LA so obviously we don’t have the same thing here! 😀 My parents do love watching tennis, though, haha! Anyways, these tarts look wonderful, and I also adore strawberries in a fresh dessert!
